You can go out to dinner and watch what you eat!

Hi, This is me two pounds lighter. Hard to see a difference don't you think? I have a long way to go.

One of the hardest things for me when dieting is knowing what to eat when I go out.
I hate to go out seems like once I am out dining out comes up and I find it difficult to watch what I eat. I know It's not fair to everyone else but what can I do. . Hm mm what to do? what to do? Yes I have my dining companion from weight watchers and I always start out with good intentions. Just seems like when I get to where I am going I forget about the diet and making wise choices. Ha at the time that I am ordering it seems to be a wise choice, maybe not the right choice but wise.
Sunday my family wanted to go visit with my sister and her family. At first I thought nah, I have to watch what I eat and when I go there I forget my diet. Oops, there I go thinking about me, it is not always about me. While I may think so not all others do and how selfish is that. I had to think of something. So like Pinky Dinky Doo I decided to think and think and think and suddenly I knew.(I guess you can tell from that sentence what TV shows I watch.) Wow, I thought let's surprise them with a visit and dinner. No call nothing just show up. So we packed up the meal and we headed to Delaware. Middletown that is.
My husband attended an affair the week before and returned with a vegetable salad that he thought I would like, he was right I did. We went with making a Salad and Kabobs. Talk about easy and quick. I found the recipe in the children' s section of the newspaper under Rookie Cookie's recipe. Since it was under the Kids section I let my granddaughter make the salad. (teaches her to read and measure).She had so much fun doing it. This salad is healthy, filling , convenient and good to eat. You can make it and snack on it all day.
It is so much easier to stay committed to a diet when all of the family is involved in it.

While Asia was making the salad I put the ingredients together for the kabobs.
Oh well I did say I am no cook, when Greg saw the size of the vegetables I cut up he said they were too small for kabobs, no worries we changed to shrimp stir fry.

When I got to my sister's house I called her to see what she was doing and told her Greg and I were riding around trying to decide where to eat. Imagine her surprise while talking to me I walk thru the door. LOL this is where we decided to eat. 2 hour drive for dinner.

And guess what I was able to go out to dinner, visit with family and still stuck with my diet choices for the day. Success!

Below is the recipe if you would like to try it...

Corny Vegetable Salad

1 (15-25) can corn, drained
1/2 cup red or green bell pepper,diced
1/2 cup tomatoes, chopped
2/3 cup cucumber,chopped
1/3 cup light Italian salad dressing

what to do
Combine drained corn and vegetables in a medium size bowl
Pour Italian dressing over top and stir to combine
Chili for several hours to blend flavors, serves four
